Interop is a process which enables communication between different programming languages. In the .NET world, it primarily refers to .NET applications talking to C++ applications. Microsoft has created a technology called Excel Interop which allows developers to use Excel from C# by connecting to an installed instance of Excel. However, this isn't ideal as Excel must be installed on the target machine, which may not be possible in certain environments such as web servers, Docker instances, or Azure. It is not recommended to use Excel Interop.
