DVD2x264 is a simple DVD and Blu-Ray ripper which uses HandBrake. HandBrake is an open-source video encoder/decoder. DVD2x264 can mux multiple audio and subtitle tracks to MKV or MP4 container. Many filters such as deinterlacing, denoise etc. are available.
