Extract subtitles from DVD Studio Pro projects (only tested version 4.x) as .txt or .srt files. txt files can be re-imported in a different DVDSP project. srt files can be transported to different subtitle tools (so it can be edited, etc.). Note that .srt files are saved as UTF-8.
drop DVD Studio project files onto DVDSP SubPick and you will be prompted to save .txt or .srt files. This app should extract every available subtitle language into the same folder where the ".dspproj" file resides. Actually won't tell you what language is the file (ie: es, de, fr...) nor will retain format (font, size, location). Just the text (UTF-8) and time.
