Light Notepad is a simple, light, native notepad. It does not sync or send any data anywhere. It's highly inspired by the Notepad application from Windows. You can change the color and font size, but this won't affect file content, because Light Notepad intentionally does not support rich text so you can focus on the content only. However, it supports many built-in macOS functionalities, such as dark mode, text-to-speech, find and replace, spelling and grammar, etc.
