Listening To displays a notification whenever a track starts playing in iTunes or Spotify so you see the track's title and artist as soon as it starts. The notification remains in the Notification Center while the track is playing so you can check out what's playing with a swipe or click and you can optionally click it to bring up the player's window.

Spotify support and clicking on a notification now optionally opens the player.
You can change those behaviors from the Preferences window, accessible by clicking the menu bar icon and selecting "Preferences…".
We've been listening to your feedback about album art but unfortunately Notification Center does not allow us to display a custom image with notifications.
